The Castle’s brilliant Executive Head Chef, Suraj’s, goal for all of his dishes is to create a spectacle for the eyes as well as a delight for the taste buds – these new menus are no different. Each dish pops with vibrant colours and intricate final touches. As his family were farmers in India, Chef Suraj grew up surrounded by home-grown fruit and vegetables. He is close to and has a lot of appreciation for the importance of nature; this shines through in all of his culinary creations which seek to nourish both body and soul.
