The Francis Hotel in Bath has launched a brand-new menu with a French twist, curated by new Head Chef Cyril Royer.

Hotel guests and local residents are invited to travel to France on a plate with Boho Marché’s new menus, which are a true celebration of the restaurant’s varied culinary inspirations. Originating from Limoges in France, Cyril has created a selection of dishes that encompass classic French cuisine with a gourmet twist.

The brand-new brasserie menu includes French favourites such as moules-frites, confit of duck cassoulet and côte de boeuf to share, as well as delicious options such as slow roasted cauliflower steak and beetroot tarte tatin. For starters, guests will be stuck for choice with delicious offerings including lamb rossini, twice-baked cheese souffle and crab rémoulade. A meal isn’t complete without dessert, and the new Boho Marché menus offer tempting choices such as chocolate fondant or St Honoré, with caramel diplomat cream.

Head Chef Cyril brings his French culinary skills to Boho Marché’s kitchen in the centre of regency Bath with over 14 years of experience as a Head Chef.  This includes a myriad of fine-dining establishments such as The Corran Resort & Spa and Gravetye Manor, which holds a Michelin Star. In his role at The Corran Resort & Spa, Cyril was paramount in raising the restaurant’s turnover by over 64%, working to achieve a third Rosette. In his new role at The Francis Hotel, Cyril will work to further enhance Boho Marché’s culinary offering, promoting Boho Marché as a must-visit destination restaurant in Bath.

Of his appointment and new menu, Cyril commented,

I am thrilled to have joined the team at The Francis Hotel and bring a new style of cooking to Boho Marché.  Listening to guest needs and focusing on new food trends, this menu is designed to drive more casual dining in the heart of Bath and appeal more to our in-house guest tastes and encourage more local Bath residents to try the restaurant.
