The Castle Hotel Windsor is preparing to relaunch this summer following a £9.5 million refurbishment, creating 25 new jobs. The investment represents a strong vote of confidence in Windsor and its future as a thriving hospitality destination, bringing new employment opportunities to people across Windsor and neighbouring towns.
As part of the transformation, a brand-new British brasserie will open. The new restaurant Penningtons, named after the original inn keeper George Pennington will be delivered in partnership with Auden Hospitality. Opening in June 2026, it will champion seasonal British produce in a relaxed, social setting. The new Penningtons bar will be inspired by the building’s origins as Windsor’s original tap room.
Dating back to 1528, the landmark hotel is undergoing a comprehensive transformation to attract the next generation of leisure and corporate guests while retaining its historic character.
Several new roles are being created specifically to elevate the guest experience and ensure every stay feels considered from start to finish. Recruitment will span front of house positions, chef and kitchen teams, event professionals, restaurant and bar staff, as well as housekeeping roles – bringing together a full-service team dedicated to delivering warm and confident hospitality.
As part of the Sutton Hotel Collection, this investment follows a very successful reimagination of the Francis Hotel in Bath and the launch of its new signature restaurant Emberwood.
